I am a huge fan of absinthe, but because of the herbs many contain they can exhaust and overwhelm ones taste buds! This cocktail brings out the herbal notes of the absinthe in a smooth, slightly spicy elixir that is neither overwhelming nor tiresome to the senses.
1 oz- Absinthe
1/2 oz- Domaine de Canton (Ginger Liquor)
1/2 oz- Asarum Ginger Simple Syrup
3 oz- Oatmeal Stout
I don’t drink beer alone on ice, and I don’t drink absinthe on ice, thus I served this in a chilled 5oz glass and stirred to mix.
This would go wonderfully with seafood, particularly Oysters Rockefeller.
